Changing Text Color

Can't change text to "white" so I can't use the dark colors. Will let me change the text to any color but white changes in the preview but not the program. Please help.
It would be nice if you could write more exactly which text color you mean.
The simple way would be to show the screenshot and mark on the screenshot what you mean.
